
If you’ve ever found yourself with an abundance of zucchini—whether from your own garden, the farmer’s market, or a great grocery store sale—you might be wondering how to make the most of it before it goes bad. One of my favorite ways to preserve zucchini is to freeze breaded zucchini.
This method not only keeps zucchini fresh for months, but it also gives you a quick, healthier alternative to chips or French fries whenever you need a salty, crispy snack or an easy side dish.

Recently, I scored 2/3 of a bushel of zucchini (about 22 pounds) for just $15.99. That’s a lot of zucchini! I preserved it in different ways—canning Mediterranean Zucchini and Tomatoes, dehydrating most of it, and using about 5 pounds to make this frozen breaded zucchini.

It turned out so good that I plan to make more next zucchini season. In fact, I may buy an entire bushel of it just for this purpose! I’m also considering buying zucchini throughout the year, even though it’s more expensive out of season, but this is so good I always want this breaded zucchini in my freezer!

The recipe I used is adapted from The Ultimate Guide to Preserving Vegetables (Amazon) by Angi Schneider. I’ve made a few changes, including using my Ninja countertop oven’s (Amazon) air fryer function instead of baking. You can do the same in any standard air fryer, or follow the original oven-baking instructions if you prefer.
Why Freeze Breaded Zucchini?
Freezing zucchini in a breaded form means that on a busy weeknight, all you have to do is pop it in the air fryer or oven for a few minutes, and you’ve got a hot, crispy treat. Unlike plain frozen zucchini, which can get mushy when thawed, breaded zucchini – especially when it’s been “sweated” to remove excess water – keeps its texture and crunch.
Frozen breaded zucchini is also:
- Versatile – Serve as a side with burgers, chicken, or fish, or enjoy as a stand-alone snack.
- Healthier than chips or fries – Satisfies that craving for something crunchy and salty without deep frying.
- Budget-friendly – Preserve zucchini when it’s cheap and plentiful, and enjoy it all year long.

Ingredients You’ll Need for Frozen Breaded Zucchini
Here’s a quick look at what goes into frozen breaded zucchini (full measurements will be in the recipe card below):

- Fresh zucchini – Smaller zucchini work best for this recipe because they have a firmer texture and better flavor.
- Salt – Used both for seasoning and for drawing out excess moisture to help keep the zucchini crispy.
- Eggs – Act as a binder to help the breading stick to the zucchini.
- Panko or plain bread crumbs – Give the coating that satisfying crunch.
- Parmesan cheese – Adds a rich, savory flavor to every bite.
- Garlic powder – Brings a subtle garlicky warmth.
- Black pepper – Adds just the right amount of mild heat and depth.
Step-by-Step: How to Freeze Breaded Zucchini
1. Cut the Zucchini into Spears
You’ll need to cut the zucchini into 1/2″ spears.

Start off by cutting off both ends of the zucchini.

Next, cut the zucchini in half. (If you’re working with larger zucchini, you may want to cut into thirds.)

Next, cut each zucchini half down the middle, length-wise.

Finally, cut the zucchini into spears, again going for about 1/2″ thick.
2. Sweat the Zucchini
To keep your frozen zucchini from turning soggy, it’s important to remove some of the moisture before breading.

Place the zucchini strips in a colander over a bowl. Toss with salt and let them sit for 20–30 minutes to draw out excess water.


After 30 minutes, I had about 1 cup of liquid released from the zucchini.

Perhaps you can see the moisture on the surface of the zucchini.

Once the zucchini has finished sweating, be sure to rinse the zucchini to remove excess salt.
3. Prepare the Coating
Now it’s time to prepare the coating. (I actually did this while the zucchini was sweating.)


Next, I added the garlic powder and black pepper to the breadcrumbs.

In another bowl, beat the eggs.
4. Bread the Zucchini
Pat the zucchini dry with a clean towel. I like using flour sack towels that you can pick up on Amazon.

Start off by putting the rinsed and drained zucchini on flour sack of paper towels.

Put an additional towel on top and pat the zucchini dry.

Dip each strip into the egg, then into the bread crumb mixture, pressing gently so the coating sticks. Arrange on a parchment-lined baking sheet.

I like using two forks for this. I have one fork in the egg bowl, and one that I reserve for the breadcrumb mixture. Use the first fork (from the egg bowl) to place the zucchini into the breadcrumbs.

Use the second fork to cover the zucchini with breadcrumbs. Press the zucchini into the breadcrumbs to help the breadcrumbs adhere to the zucchini. Flip them over, and repeat.

As you take the zucchini out of the breadcrumbs place them in a single layer on a parchment paper linked baking sheet. If you don’t have parchment paper, you can use waxed paper.
5. Freeze Breaded Zucchini Before Storing

Place the baking sheet in the freezer overnight. This step ensures your breaded zucchini won’t stick together in storage.
6. Put into Freezer Bags or Containers
The next day, transfer the frozen zucchini strips into freezer bags or containers. Label and date the bags—you can store zucchini this way for up to 6 months.

Cooking Your Frozen Breaded Zucchini
When you’re ready to enjoy them, there’s no need to thaw first. Here are your options:

- Air Fryer (My Favorite) – I use a Ninja countertop oven with an air fryer function (Amazon). Cook at 360°F for 15 minutes, flipping halfway through.
- Oven – Bake at 425°F for 25–30 minutes, or until golden brown and crispy.
Either way, you’ll get a healthier, homemade alternative to French fries that’s still crispy and satisfying.
Tips for Success
- Choose small zucchini – They have a better texture and flavor for freezing.
- Don’t skip sweating – Removing moisture is key to preventing sogginess.
- Use vacuum sealing if possible – It extends freezer life and keeps zucchini fresher.

How to Freeze Breaded Zucchini for a Delicious Side Dish or Snack

Preserve zucchini at its peak by freezing it in a crispy, breaded form. Perfect for a healthier alternative to chips or French fries, this breaded zucchini can go straight from the freezer to your air fryer or oven.
Ingredients
- 2 lbs (907 g) small zucchini, cut lengthwise into ½-inch (12-mm) strips
- 2 tbsp (36 g) + 2 tsp (12 g) salt, divided
- 2 eggs
- 2 cups (112 g) panko or plain bread crumbs
- ½ cup (50 g) grated Parmesan cheese
- 1 tbsp (9 g) garlic powder
- ½ tsp ground black pepper
Instructions
- Sweat the zucchini: Place zucchini strips in a colander over a bowl. Sprinkle with 2 tablespoons of salt and toss to coat. Let sit for 20–30 minutes to draw out moisture.
- Rinse the zucchini: Be sure to rinse the zucchini well after sweating to remove excess salt.
- Prepare coating: In one bowl, beat eggs. In another, combine bread crumbs, Parmesan, garlic powder, pepper, and remaining 2 teaspoons of salt.
- Bread the zucchini: Pat zucchini dry with a clean towel. Dip into egg, then bread crumb mixture, pressing gently to coat. Arrange on a parchment-lined baking sheet.
- Freeze before storing: Place baking sheet in freezer overnight. Transfer frozen zucchini to freezer bags or vacuum seal. Label and date. Use within 6 months.
